I bet you thought this was a baby food recipe.
No no, my friend. This is one for you. And it’s going to give you just the right amount of oomph to get you going on those mornings when your baby decides that sleep is for the weak.

So without further ado, here is my favourite dessert-for-breakfast dish, created by a tired mum, for tired mums.

Recipe
- 40g porridge oats (or as many as you like, we don’t judge)
- 25g butter or some fry light
- 1 teaspoon of sugar or sweetener
- Squeeze of lemon juice
- And the piece de resistance – anything from 1 tbsp to half a jar of lemon curd
- Optional – Alpro vanilla for serving

Method
- Melt your butter in a pan and then coat the oats. Stir fry on a medium heat for a few minutes until the oats have softened.
- Sprinkle sugar on top, squeeze in your juice and stir to combine.
- Add your lemon curd (it will hiss as it hits the hot pan, don’t panic) and melt into the oats for a minute or so.
- They will go sticky and flapjacky and delicious – serve hot over your yogurt! (Alpro vanilla is my favourite because it tastes like cold custard, but other brands are available.)

Top tip
The idea is to cover your oats in something sticky and delicious that probably shouldn’t belong on the breakfast table, then use it as a topping for yogurt/custard/an entire tub of Ben and Jerry’s. Whatever strikes your fancy and whatever you’ve got in the cupboard.
(Full disclosure – as I finished my last bag of oats I spotted that they were best before 2023, but I haven’t died yet. So, if you’re raiding the shelves for ingredients and you notice a packet of questionable origins, shut your eyes and pretend you picked it up in Asda last week. I won’t tell if you don’t.)
